Direction and Ingredients

3 eggs

1 1/2 Cups sugar

1 Cup vegetable oil

2 Cups flour

1 Tablespoon ground cinnamon -- (1 to 2)

1 Teaspoon baking soda

1/2 Teaspoon salt

6 Medium Newtown Pippin apples

1/2 Cup coarsely chopped almonds

Sweetened whipped cream or vanilla ice cream

Peel apples, core and cut into eights. 1. Combine eggs, sugar and oil; mix well. 2. Combine flour, cinnamon, baking soda and salt; add to egg mixture and blend thoroughly. 3. Stir in apples and nuts. 4. Spread in greased 8-inch square pan. Bake at 325 F. 75 to 80 minutes or until wooden pick inserted near the center comes out clean. 5. Serve warm with whipped cream or vanilla ice cream.

TIP: Cake may be baked in a greased 13 x 9 x 2-inch pan at 350 F. 45 to 55 minutes. jmerrill@prodigy.com
