Amount Ingredient Preparation
1 cup sour cream
1/2 each orange peel grated
3/4 cup brown sugar firmly packed
1/2 teaspoon salt
2 each egg yolks well beaten
1 each pie shell 8 inch, unbaked
2 tablespoons flour
2 1/2 cups peaches peeled, sliced
 Blend the sour cream, peel, brown sugar and salt, then stir in the egg yolks.

Sprinkle bottom of pie shell with 1 tablespoon of the flour.

Pour in peaches and sprinkle with remaining flour.

Pour sour cream mixture over all.

Bake at 425 degrees F for 15 minutes, reduce heat to 35 degrees F and bake 3 minutes.

Let cool.
