6 Pickled herring, drained
1 lg Onion, chopped
1 Garlic clove, crushed
6 Eggs, hardboiled, peeled and
Chopped
1 Apple, cored, chopped
1 t Lemon juice
1 c Sour cream
1/4 ts Salt
1/4 ts Pepper
2 tb Dill, fresh, chopped
- or use parsley
1. Cut herring into small cubes. Mix herring with onion, eggs, apple, and
lemon juice.
2. Combine sour cream, garlic, salt and pepper; add to herring mixture and
mix well. Sprinkle with dill or parsley.
3. Serve with rye bread.
