2 1/4 c Oat bran
1/4 c Brown sugar
2 ts Baking powder
1 1/2 ts Ground ginger
1/4 ts Black pepper
1/2 c Raisins
1/2 c Walnuts OR raisins OR other
Fruit or nuts
1 x Egg equivalent
1/4 c Honey
3/4 c Warm skim milk or non-dairy
Equivalent
Mix wet and dry ingredients in separate bowls. Combine and let set 10
minutes. Pour into lightly greased/pammed muffin tins. Bake at 375 degrees
15 minutes or until lightly browned.
